If the voltage is fixed, e.g. for a NiMH cell, is the maximum current fixed for all types of NiMH battery?

No, the current can vary depending on the dimensions of the electrodes. For example, your standard car battery will give you enough amps to start a car, while those on submarines will provide enough to run the sub.
