Natural rubber latex chemistry in general


I want to know more about natural rubber latex. I know so little that I'm not even sure what to specifically ask about nor where to look, so bear with me...

For example, can latex suspensions/solutions(?) be thinned it some way? Supposedly water works, but whenever I've tried that it has "curdled" instantly. Why do latex suspensions smell of ammonia? Why is there ammonia in there? Can anything about the rubber be modified once it has dried? Is it soluble in anything?

Just general information on the subject would be real interesting
