The nitrogen on amino acids is too basic for this to work. Think about it - what do acyl chlorides do with amines?

I weep at the sight of flaming acetic anhydride.

In general you don't have to do every distillation under a vacuum, all the vacuum does is lower the b.p., so as long as you can get the temperature high enough to boil whatever substance it is, you won't need a vacuum. However I recommend using a vacuum as it makes distillation ALOT easier sometimes.

So you have no clues about the basics of organic synthesis, yet you are only interested on how to make the ephedrine isomers. Definitively the wrong choice of target for learning the art of organic synthesis. If you came here because you have a passion for chemistry, then start with questions about realistic syntheses that aim at improving your knowledge and skills, but if you are here because of greed, then you are lost here.

PS: Beginner's questions go to the Beginnings section, though it could just as suitably go to the Detritus section without harm.
