Fisher Esterification - Flavoring Chemicals


New here, I got back into chemistry about 2 years ago, have been manufacturing flavoring esters via. Fisher Esterification. To date: Isopentyl propionate ("juicy fruit"), Ethyl Butyrate (pineapple), Propyl Acetate (pear flavor), Isobutyl Propionate (rum flavor), Isopentyl Acetate (banana oil), Octyl Acetate (orange), methyl salicylicte (oil of wintergreen). Fun, developed a lot of good laboratory technique in reflux and distillation.
Looking for the next challenge: Grignard reactions? Where do I go from here? Love medium scale (50ml of product is my goal).

A fun procedure is the oxidation of toluene to benzoic acid with potassium permanganate. Scale up this procedure accordingly http://en.wikibooks.org/wiki/Applied_Science_BTEC_Nationals/... It helps to use toluene in excess too.
