Is the hardest part of making aerogels DIY the extraction of the water/alcohol from the sol-gel with supercritical CO2?

You don't need supercritical extraction, see US patents 5565142 and 5680713 for example.

Actually, someone did. http://homepages.cae.wisc.edu/~aerogel/aboutaerogel.html

They even supercritically dried out jello, making an edible aerogel.

Well 'they' used supercritical CO2 and are not members of this forum.
