Sodium (s) from NaOH electrolysis, gas?

Sodium(s) can be made from running 12V though carbon rods in molten NaOH (probably 400C).

I'd like to know, what is the gas forming? I assume its water, but there is not enough H and O to make all the OH into water, does this leave half of the molar sodium as Sodium Oxide?

Is there a fool proof method of this kind of production of sodium metal, when no sodium oxides are made? Apparently sodium oxide reacts similarly to soidum metal so its hard to tell what im really making unless the oxides look a lot different.
