I'm a little surprised you can't get potassium nitrate and sodium metabisulfite in your local area TAS, they are two things I've never had trouble
finding.
Potassium nitrate is from a farm supply store and the sodium metabisulfite is in the home brew section at BigW or probably any home brew shop, they
use it as a sterilizer. If you weren't so far away I would give it to you
