Ok if Acetone is produced by decomposition of Calcium Acetate by heat, why the dry Ca(Ac)2 salt not burning when heated with torch?

The guess is that heat is absorbed by the decomposition.

I thought that it should burn, maybe you have a hydrate?

The decomposition only occurs if a lot of energy is put into the compound. So, the energy you gain by burning the resulting acetone is lost on decomposing the other surrounding material. Only if the energy, needed to decompose the material is low, compared to what you gain on burning the composition products, there will be self-sustained burning. Otherwise you'll need to apply external heatng to support the burning.
