Malic Acid (Apple Acid)

Hi all

How extract Malic Acid (Apple Acid) from apple

Probably by fractional crystallization of the juice, the major constituents of which would be fructose, glucose, and starch. Ascorbic acid, minerals (especially potassium, chloride, phosphate), citric acid, and sucrose and other sugars, would also be present.

I wonder if it's worth fermenting it and distilling to get rid of the sugars as alcohol.
Calcium malate isn't very soluble (<1%) so you might be able to ppt that, then regenerate the free acid with H2SO4.

Any perticular reason for asking, or just curious?

i search for prepare malic acid to used it in soft drinks
after searching in all web sites
i found this sit

Seems like it might be a lot of work for something that is easily purchased from a brewers supply shop, especially since all you want is food grade. Combinations of malic, citric and tartaric acid are commonly used to correct acidity in home made wines - hence their availability at home brew shops.

In the spirit of bumping threads, ;) I was thinking, crabapples are awfully sour aren't they? Oughta be apple acid (literally, malic), and not much sugar, though you may have to contend with pectin if you essentially make jelly out of the stuff to extract the acid. Should be easy to collect a couple buckets full of crabapples from the neighborhood for the trouble of picking them, eh?

Well, a search here will show several entries in the thread

which, while it started out about tannic acid, has drifted into malic. There I posted an old method for extracting malic acid, and there's some ongoing talk about isolating it from malic acid caps.
