cant you just subsitute ammonia for sodium bicarb in a reaction with acetic acid?

NaHCO3 + CH3COOH ----> CH3COONa + H2CO3

so NH3 + CH3COOH ------> CH3COONH4

there ya go
find yourself some vinegar and ammonia if you cant get better grade chems and react away
the only other product is water which is also a reactant
