Demethylation of caffeine

I have recently thought about demethylating caffeine to obtain xantheine, but I want to know first some methods you have tried or you have heard of so I can use a good procedure.

Which is the best method to do so?

It's the right subforum, because you cited no references. It's perhaps not the right forum, because sciencemadness tends to help those who help themselves. The best method of getting help is review all the threads here that mention xanthine (there are 11 that came up for me just now), read up on the compound (you can start at Wikipedia). And since this is the basis for a number of bioactive compounds, there's lots of literature on metabolic pathways out there.
