Question on joining 2 amino acids

I'm not an organic chemistry expert but I wonder how 2 amino acids can be combined in simple conditions. I believe this type of reaction is called condensation reaction.

I found this
http://www.drugfuture.com/OrganicNameReactions/onr36.htm
but I have no idea what this means
"Conversion ...."
How are you converting?

"reaction with a second amino acid with ring opening and formation of an acylated unsaturated dipeptide"
HUH?

How about starting with a simple amino acid such as glycine and make this
Glycylglycine
